Genie in a bottle?
After distilling, we dilute the spirit, which comes out of the distillation kettle at around 80-85% alcohol, with water to the desired drinking strength (40-48% alcohol) and let it settle for a few months. We never add extracts or aromas after distillation. All flavors are the result of our raw materials, the fermentation, the (real) herbs or the oak barrels.
